This is not a problem for those who have a nonstick hopper tray, but I thought the aluminium hopper tray escapes so easily because it’s fake. Most importantly, the hopper tray should not be used for anything else. The reason for that is that it tastes good when making hoppers. Eggs are not the best to fry.
The First Method:
First, make a potty out of a thick piece of cloth. You need all the coconut powder leftover from the day’s cooking. Then pour the coconut oil well into the pan and heat until smoked. Heat until well smoked, then remove from the heat and refrigerate for 10-15 seconds. Rub the oil well again. Heat well until smoked again and do this process for about 10 minutes.
Then fill the pan with about half of the coconut powder and mix the coconut powder in a circular motion with a well-heated spoon. Do this until the coconut powder turns brown. Add fresh coconut powder and cook for at least half an hour as before.
After that, rub coconut oil well again and do the same three or four times as before. Now your tray is ready to make hoppers. Once the spoon hits the bottom of the pan, the hopper will simply come off.
The Second Method:
All we have to do is take some gourd and put it in a saucepan and boil it well. Then rub the boiled gourds well in the pan. Then rinse with clean water and drain with a little oil.
Or you can heat a saucepan, cut it in half, grate a large onion and set it aside.
Or you could use a separate oil saucer and a small cloth to coat the oil pan.
The Third Method:
Ingredients:
- Coconut powder
- Water
- Bee oil
- A little ripe betel leaf
- A hand-made cloth bag
How to Season:
First, put the coconut powder and water in a new pan and boil for about an hour.
Then remove it and take some more coconut powder and fry it in a pan until the coconut powder turns brown.
All you need now is “rat oil”.
Remove the roasted coconut husks from the pan, wipe the pan thoroughly, and add about a tablespoon of the buttermilk to the pan.
After smoking the oil, place a betel leaf on a cloth the size of a palm and rub the betel leaf on the good side around the pan. (Do not burn your hands)
Now you can make hoppers right away.
Important:
“Bee oil” is available in Sinhala drug stores. The villagers sit on the oil if there are bee trees. I also have homemade rat oil. The photo has rat oil. Slightly thicker than other oils.
When you buy betel leaf you need to buy a little ripe one. The betel leaf explodes when placed in heated rat oil. Then the juice inside the betel leaf comes out and adds to the oil. That’s when we take a pot and roll it around the tray. Some people don’t know if betel leaves are added to hoppers. But this does not change the taste of the hoppers. In the beginning, a little to brush the hopper from hopper to hopper. Then just hopper escape.
Instead of frying coconut powder, you can do this. If you can put the coconut oil in the pan for a couple of days, but that’s fine. But you can’t make hoppers all of a sudden then. I have to be patient for a day or two.
