One of my favourite Korean dishes is Haejangguk (Hedgehog) – Pork Bone / Ribs Soup (also known as Hedgehog). Not only me but most of the Sri Lankans in Korea is right. I have never made one at home because I can taste a delicious hedgehog at any time of the day, in any city in Korea. I’ll show you how to make it. Before that, I thought it would be nice to write a little bit about Hezenkuk.
Even those who have seen the Korean teledrama Changumi, who is unfamiliar with Korea, know that there were a food culture and medicine in Sri Lanka as well as in India and Korea that goes back to ancient times, and this food goes back to very ancient history.
Today, children, young and old alike enjoy Hejenkuk without distinction According to the Koreans, Hegenkuk was consumed in the distant past to avoid the discomfort felt by the body when intoxicated. Hence the use of the name Hezenkuk. In Korean, “guk” means “soup”.
Many Sri Lankans in Korea are very fond of hedgehogs made from pork musk, the main reason being that they have a taste similar to that of Sri Lankan food, making hedgehogs in addition to pork muskets. They are Konnamul Hedenjuk (Bean Sprouts Soup) and Sonji Hedenjuk (Beef Blood Soup). So let’s see how to make haejangguk.
Ingredients:
- Pork Bone / Ribs Soup
- Ice water
- A piece of ginger
- Salt
- Napa Cabbage (This is a Chinese cabbage. Available at Sri Lanka Food City)
- Soybean paste
- Fish sauce
- Chilli paste
- Management Chili peppers
- Pottery and Ceramics Pepper
- Crushed garlic
- A little bit of cooking wine
- A pinch of salt
How to Make:
Put slightly fleshy pork bones/ribs in ice water for about 2 hours.
Add the washed and cleaned muscat pieces, ginger and salt and bring to a boil. After about an hour and a half, remove the ginger pieces.
Napa Cabbage Add a pinch of salt, boil for a few minutes, rinse with water and cut into large strips and add to the cooked meat.
Add soy paste, fish sauce, chilli paste, chilli, pepper, crushed garlic and a pinch of cooking wine to taste.
When serving, place a pinch of salt on top.
Serve with a cup of rice, kimchi (Korean dish: How to make it in our “Cooking” app in the future), chopped onions and a few peppercorns.
